Yield:
36 medium-size muffins
Ingredients
4 cups flour
2-1/2 cups sugar
4 teaspoons baking soda
4 teaspoons cinnamon
pinch of salt
4 cups grated carrots
1 cup raisins
1 cup shredded coconut
2 apples, peeled and grated (Cortland, Empire, Golden Delicious)
6 eggs
2 cups vegetable oil
4 teaspoons vanilla extract
Instructions
Preheat oven to 350 degrees F. Mix together the flour, sugar, baking soda, cinnamon, and salt. Stir in the carrots, raisins, coconut, and apples. In a separate bowl, beat the eggs with the oil and vanilla. Add to the flour mixture and combine well. Spoon the batter into greased or paper-lined muffin tins and bake 35 minutes.




These muffns are delicious, and they also freeze very well. Just be sure they are not underdone or they will get greasy. And you must use a LARGE mixing bowl since it makes such a huge batch. One of my family’s favorites.
I have been making this recipe for years, but misplaced my recipe file in a recent move.. Still unpacking.. I was happy to find it on the Yankee Magazine web site. I found this recipe in a Yankee magazine years ago.. The Best Morning Glory recipe from the East to the West coast. I think its the original. Because it was named after the “Morning Glory” recipe in a small town in New Hampshire. Everyone I serve them to, loved them. Makes a big batch. I cool them on a paper towel as it absorbs some of the oil. Freeze well. Eat very well..Mickey from California. (a Yankee subscriber)
I lost this recipe several years ago. I was very glad to find it online, it is delicious. I made these for our gourmet group mountain-weekend-away breakfast, froze them and then reheated them the next morning. A 5-hat review was given by everyone. 10 of us ate all 36 muffins.
This is a recipe that I had lost. It was a recipe that my family absolutely loved. I could make the large batch and freeze some. The kids always had a great snack on hand. I was very unhappy that I had lost the recipe and was so happy when I saw it listed here. Many thanks!
This sounds like the same recipe from my “Five Gables Inn” recipes, which is a B&B in East Boothbay Maine. I have made these muffins many times and froze them to have for breakfast in the a.m. They are very yummy and my favorite muffin!
No, this is not quite the same as the Yankee magazine original which calls for
* 1 cup applesauce instead of grated apples
* 1 cup oil instead of 2!!!!!!!!!
* 1 tsp vanilla instead of 4
* 1 tsp salt instead of a pinch
* 1 cup chopped walnuts
Think I’ll stick to the old version. Was just checking combination steps 3 and 4 … that page seems to have flown away!
Is it possible that someone has the original MUFFIN recipe? The muffins in this recipe are absolutely fabulous, but I long for the traditional muffin.

2 cups oil, 2-1/2 cups sugar – too much of each.
I’ve been making these for years. Use 1 cup of oil and 1 cup of applesauce. Cut the sugar to 1 1/2 to 2 cups. It makes 3 dozen muffins so that amount isn’t too much.
Can I use pineapple and the juice?

I am going to make these, but some have commented that the oil and sugar amounts are too high or higher than the original recipe. Any suggestions for how much I should use?
I cut all sugar, in all recipes, in half. Always.
You can add some applesauce in place of oil, or some banana!

This is different from the original recipe. The one I have is from the Morning Glory Cafe on Nantucket where they originated. These sound good and I may still try them!
I have made these many times over many years. People always loved them . Think I may make a batch for the upcoming cooler weather…

I baked my first pan for 35 min as directed and they were Way over baked and had to throw them out! The rest were baked for 20 min and were perfect.
Thank you for that tip. I would have started with the regular mixing bowl that goes to the mixer.
Morning Glory muffins originated at Fowler’s in Newburyport, MA. I used to get them there since the early 70s. Anyone else saying they originated it is just copying their recipe.

I would like to use much less oil and as little sugar as possible. Any suggestions are appreciated.
Is the coconut required for taste or can it be cut?
The commenter who said 35 minutes was too long a cooking time was correct. 20 minutes yielded a perfect muffin. I have now made several batches and have found that substituting apple sauce for half the oil results in a moister, more flavorful muffin. And in one batch, I substituted grated beets for half of the carrots. The difference is subtle but intriguing. In another batch, I added some dark rum with the liquid ingredients, giving the muffins an additional depth of flavor.

Great recipe!! I replaced the vegetable oil with coconut oil. Also, did not have apples and used applesauce (2 cups) in place of them. Only used 2 cups of sugar too – instead of 2.5 cups. Only made 24 muffins and the rest I put in a casserole dish and baked for the whole 35 minutes which was appropriate. The muffins cooked perfectly in less time 20 minutes. Glad I watched and checked. Thank you!
Just made these! 1/2 batch, added walnuts, chia and flax seed, some almond flour, cranberries, applesauce ,did 22 minutes. Even had the same pan! Delicious.
