A family recipe, this light and airy dish is almost a soufflé.
6 medium sweet potatoes, boiled, peeled, and mashed
1/3 cup butter
1 and 1/4 cups brown sugar
4 egg yolks, well beaten
1/2 cup sherry
salt to taste
1 teaspoon nutmeg
1/4 teaspoon mace
2 egg whites, stiffly beaten
Cream together the butter and sugar and mix in the beaten egg yolks, the mashed sweet potatoes, sherry, and seasonings. Fold in the egg whites and pour the mixture into a buttered casserole and bake at 350 degrees F for 40 minutes.
