Nana’s Irish Soda Bread

I learned to make this recipe as a child. The original recipe came directly from Ireland. It is a wonderful addition to any meal but most appreciated with coffee or tea.

Ingredients

1 cup sugar
4 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
3 heaping tablespoons shortening
1-1/4 cups buttermilk
2 eggs
1 cup raisins
1 cup golden raisins
1 tablespoon caraway seeds (optional)

Topping:
2 tablespoons butter
1 teaspoon sugar

Instructions

Preheat oven to 350 degrees.

Combine dry ingredients in a large bowl. Add raisins, shortening, eggs and buttermilk and caraway seeds. Knead with hands. Dough will be very heavy.

Place in greased tube pan. Bake for 50-60 minutes until golden.

Melt butter and pour on top. Sprinkle with sugar.

  1. Nana has a bit of a sweet tooth, eh? Made this just as the recipe suggests except that I used I cup golden raisins, 1/2 cup each dried cranberries and currants, and sprinkled the tops with demerara sugar before baking. Delicious toasted! Next time will cut back sugar in the recipe by half, but this was great! Thanks, Nana!
