Mountain Cookies (Molasses)
Yield
3-4 dozen cookies
Ingredients
1/2 pound butter, margarine, or shortening (melted and cooled to lukewarm)
2-1/2 cups sugar
1 teaspoon cloves (you can substitute nutmeg or ginger, but cloves gives this cookie its distinctive flavor)
1 teaspoon cinnamon
1 beaten egg
1/4 teaspoon salt
1 tablespoon baking soda
1/4 cup molasses
4 cups flour
Instructions
Grease baking sheets.
Preheat oven to 350 degrees.
In large bowl combine first 6 ingredients and mix well. Dissolve baking soda in 1/4 cup warm water and add to large bowl. Beat in molasses. Stir in flour. Drop dough in walnut-size lumps on a greased cookie sheet. Cook 7-10 minutes (I cook 8 minutes). Cookie is barely done in middle and crisp around edges when done.

This old recipe from a ‘Great New England Cooks’ article in the early 90’s (?) has been a 4th of July staple in my home. The original recipe was called ‘mountain O’ cookies’, created by a young woman chef who cooked on boats.. I have added additional spices, including cardamom, but the distinctive flavor, and the chewy, old fashioned nature of these cookies comes from the cloves.
I serve them with huge bowl of fresh cherries. Love em’!
I have made Chewy Spice Cookies from Yankee magazine, July/Aug, 2001 issue and it has always been a favorite. This recipe calls for cardamom, too.
