Granny Smith Apple Brunch Cake

This brunch cake is loaded with tart Granny Smith apples and the warm aroma of cinnamon. The crust on the top gets nice and crunchy, while the rest of the cake is soft and tender. Read more about the process of making this Granny Smith Apple Brunch Cake.

Ingredients

cooking spray
1/2 cup butter, softened
8 ounces cream cheese, softened
1 cup sugar
2 eggs
1/2 teaspoon vanilla
2 cups all-purpose flour
1/4 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 cup milk
3 medium-size Granny Smith apples (peeled, cored, and diced)

Instructions

Cream together butter and cream cheese. Add sugar and eggs, beat well. Add vanilla. Sift flour, salt, baking powder, and baking soda together in a separate bowl. Add to the cream cheese batter alternately with milk. Stir in diced apples. Batter will be very thick. Spoon into greased and floured 9×13-inch pan. Prepare the topping by combining the flour, sugar, and cinnamon, and mixing well. Cut in butter in small pieces until it is the size of small peas and is evenly distributed. Sprinkle the topping mixture evenly over batter. Bake at 350 degrees For 50 to 60 minutes. Let cool at least 20 minutes before slicing.

Ingredients

3/4 cup all-purpose flour
1/2 cup brown sugar
1/2 teaspoon cinnamon
1/4 cup butter

Instructions

Mix together ingredients. Crumble over apple cake.

  1. I absolutly loved this cake. It was very easy to make and the cream cheese kept this cake so moist. A delicious cake to enjoy with a special friend and a cup of tea on Sunday morning

  2. Is there a way to print the recipe without the picture? It’s frustrating to have to copy the body of the recipe over to Word to get a single page print-out.

  3. Made this cake! Family loved it and my sister wanted the recipe. It was light and moist and not too sweet. I wouldn’t want to add more sugar to the topping.
