Yield: 6 to 8 servings
Ingredients
- 2 cups uncooked egg noodles
- 1 pound ground beef
- 1 can (10-3/4 ounces) condensed cream of mushroom soup
- 1 can (14-1/2 ounces) tomatoes, drained
- 3/4 cup shredded cheese (Cheddar, Colby, Monterey Jack, etc.)
- 3/4 cup diced green bell pepper (optional)
- salt and pepper to taste
- 1 can (2.8 ounces) French-fried onions

What kind of tomatoes, just plain diced tomatoes? Or stewed tomatoes, or something else??

These are inexpensive meals for families. They are quick to prepare and kids like them. I remember haveing meals like this, they fed allot!
Make your own cream of mushroom soup to cut back on the sodium. Saute mushrooms of your choice in olive oil or butter. Remove cooked mushrooms, then add a tblsp of butter. Toss in 1 – 2 tblsp flour and make a roux. Add stock of your choice (about 1 cup). Add mushrooms back to mixture and cook on low until thickened. Add heavy cream, salt and pepper to taste and voila! Cream of mushroom soup.
Good for feeding a bunch of kids, but not the best choice for most folks. Too much fat and sodium.
I make this dish frequently. My fiance LOVES it….I add 2 cans of soup ( 1 cream of mushroom, and 1 cream of chicken). I also bought cheddar flavored french fried onions this time. Can’t wait to try it.
Quite good. Nice on a cold night. I used shredded hash browns instead of pasta and tomatoes with chilies.
The hash browns, chilies and tomatoes sounds like a nice change. Reminds me of a Mexican casserole idea a friend made for me. Bacon and cheese cornbread would make a nice side for it.
I followed the recipe exactly and my family loved it! I wouldn’t change a thing and I’ll be making this again for sure!
This was an incredibly tasty dish. I also added some sliced mushrooms and a bit of chopped, sauteed onion, and made a double batch to freeze, but I don’t think it is going to make it that far.
I made a few adjustments since I didn’t have some of the ingredients. I used Cream of Chicken soup and stewed tomatoes. I added mushrooms, celery and onions. My husband and I loved it. He wants me to make it more often. I truly recommend you try it. Very good.
This was delicious! My husband loved it and he won’t eat anything new. It’s also great to double it for a church social.
This is a wonderfully quick and easy meal and will keep your tummy full. Kids loved it, too!!!!
