Can you believe summer is unofficially here?!? With Memorial Day behind us, it’s time to start thinking about cookouts, grilling outside, and enjoying the nice weather. It’s also the time of year when impromptu get-togethers start popping up on patios everywhere, so it’s good to be prepared to dash out with a side dish in hand when the invitation is extended. And when it comes to summertime side dishes, this recipe for American potato salad is a cookout classic.
This American potato salad has just enough mayo to make it creamy, pieces of celery and scallion to give it some crunch, and parsley to give it an herbal citrusy note. And who could forget the hard boiled eggs! I love potato salads with eggs in them.
I doubled the amount of celery, scallions, and eggs in the recipe. I like having more of the mix-ins in a potato salad than potatoes. Feel free to adjust the amount of these ingredients based on your own personal preferences.
