In her new book, Summer Style: Food, Flowers, Fun, party planner and floral designer Debi Lilly shares more than a dozen themed celebrations featuring dreamy tablescapes and easy, fresh recipes—like this colorful Peach Tomato Salad with goat cheese and homemade vinaigrette. It’s the perfect addition to a summer sunset soirée.
Ingredients
3 ripe peaches, sliced
2 medium heirloom tomatoes, sliced
1 pint cherry tomatoes
2 tablespoons olive oil
2 tablespoons fresh lemon juice
1 tablespoon balsamic vinegar
1/2 teaspoon fresh thyme, chopped
1 bunch fresh mint, chopped
Sea salt, to taste
Freshly cracked black pepper
4 ounces crumbled goat cheese
Instructions
In jar or medium bowl, combine vinaigrette ingredients well (oil, lemon juice, balsamic vinegar, thyme, salt, and pepper). Taste the dressing. If you want to add additional seasonings do this now to finish the vinaigrette. Store in fridge until you’re ready to dress the salad.
Slice the peaches. Cut the tomatoes into slices. Slice cherry tomatoes in half.
On platter, assemble sliced peaches and tomatoes. Top the with the crumbled goat cheese. Drizzle vinaigrette on top right before serving. Garnish with fresh mint and black pepper.
