A quick and easy recipe that would also be good as a stuffing for peppers. For variety — or lower fat content — substitute chicken for the hamburger, or omit both the beef and the chicken and serve it as a vegetarian dish. To stretch this recipe to feed a bigger crowd, cook more rice.
1-1/2 pounds lean ground beef
1 onion, chopped
1 can (16 ounces) stewed tomatoes
1 can (10-3/4 ounces) condensed tomato bisque or tomato soup plus 1/2 can water
1 package (16 ounces) frozen mixed vegetables
2 cups cooked rice (1 cup uncooked)
salt and pepper to taste
In a large nonstick skillet, brown the meat with the onion. Drain off any excess fat. Add the stewed tomatoes and tomato bisque plus water. Heat thoroughly. Add the vegetables and cook for 3 to 6 minutes, until heated through. Add the rice and simmer a few minutes until hot. Season to taste with salt and pepper.
