Ingredients
1 cup steel-cut oats
4 cups plus 1/4 cup whole milk
1/2 cup water
1 cinnamon stick
3 tablespoons dark brown sugar
1 teaspoon vanilla extract
1/2 teaspoon table salt
2 1/2 ounces dark chocolate, finely chopped
Toppings (toasted coconut flakes, toasted pumpkin seeds, chopped toasted hazelnuts, etc.)
Instructions
Rinse the oats under cold water or, preferably, soak them overnight. Set a medium saucepan over high heat and add oats, 4 cups milk, water, and cinnamon. Stir, then bring to a boil. Immediately reduce heat to a low simmer. Cook oats, uncovered, until tender, about 40 minutes (or 10 minutes, if you soaked them overnight), stirring frequently. Remove from heat and discard cinnamon stick. Add brown sugar, vanilla, and salt, then add chocolate and stir until melted.
Divide among four bowls and finish with a bit of warm milk and toppings, if desired.




I soaked the oats overnight, and it still took closer to 40 minutes than 10 to make the oatmeal come together. It was delicious – we put toasted walnuts on top – but be prepared for a longer cooking time even if you do soak the oats.

Hi Aimee – Just saw your reply now as I came back to reference the recipe again! My daughter requested it for breakfast this morning! I soaked the oats overnight, 10+ hours. I did the same last night so we’ll see how it comes together this morning! 🙂

I have to agree with Kelly; I’m cooking my oatmeal as we speak and I am over the 10mins and still have a ways to go. I soaked mine overnight in water about 1/2in over the top of the oats. Cant wait to try this!
