Row 34’s summer cocktail “The Weekender,” inspired by the new TV series “Weekends with Yankee.”
Photo Credit : Mark FlemingRow 34, an oyster bar and eatery in downtown Portsmouth, NH, created this delicious summer pineapple and rum cocktail inspired by Weekends with Yankee, a new 13-episode documentary series celebrating New England. On the third episode of the series, the hosts traveled along the coast of New Hampshire to celebrate local oysters with Row 34 star chef Jeremy Sewall, followed by a tasting of his delicious and authentic oyster stew (get the recipe here).
1.5 oz House Rum Blend (spiced rum, gold rum, light aged rum blend)
3/4 oz Pineapple Anise Syrup (whole pineapple chopped, 1/2 cup anise, 1 qt. sugar, 1qt. water – combine all, heat to a boil, reduce and simmer for 30 minutes)
1/2 Fresh Lime Juice
Handful of mint
2 dashes Angostura bitters
Shake over ice, double strain into coupe – top with dry sparkling wine – garnish with mint.
