Lemon Squares

Our readers tell us this recipe for lemon squares is always a big hit at parties, and we couldn’t agree more! The sweet and tart flavors blend in perfect harmony.

Yield: 24 squares

Crust:

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup confectioners' sugar
  • 1 cup margarine

Instructions

Preheat oven to 350 degrees F. Mix flour and sugar for crust, and cut in margarine. Press into a 9x13-inch baking pan. Bake for 25 minutes.

Filling:

Ingredients

  • 4 eggs, beaten
  • 2 cups sugar
  • 1/3 cup lemon juice
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder

Instructions

Combine ingredients for the filling, and pour onto the baked crust. Bake for 25 more minutes. Sprinkle with confectioners' sugar. Cut in squares and serve when cool.

    The crust is too greasy, and the filling is too sweet, you can’t taste much of the lemon.

  • As a Yankee at heart who lives in and loves Naples, Forida, I decided to make this recipe, substituting key lime juice in equal amounts for lemon juice. It was terrific! Everyone loved them at a party I catered in Naples. I used a bottled key lime juice and then put them on a platter with fresh blackberries and they tasted and looked great.

    I add 2 Tbsp of fresh grated lemon zest..makes a great flavor even better. Enjoy

    I thought this recipe was marvelous! I made it as one of our Thanksgiving desserts and it was a big hit. I had a lemon square recipe from years ago and lost it. This Lemon Square recipe has taken it place.
