Crust:
Ingredients
2 cups all-purpose flour
1/2 cup confectioners’ sugar
1 cup margarine
Instructions
Preheat oven to 350 degrees F. Mix flour and sugar for crust, and cut in margarine. Press into a 9×13-inch baking pan. Bake for 25 minutes.
Filling:
Ingredients
4 eggs, beaten
2 cups sugar
1/3 cup lemon juice
1/4 cup all-purpose flour
1/2 teaspoon baking powder
Instructions
Combine ingredients for the filling, and pour onto the baked crust. Bake for 25 more minutes. Sprinkle with confectioners’ sugar. Cut in squares and serve when cool.

I thought this recipe was marvelous! I made it as one of our Thanksgiving desserts and it was a big hit. I had a lemon square recipe from years ago and lost it. This Lemon Square recipe has taken it place.
I add 2 Tbsp of fresh grated lemon zest..makes a great flavor even better. Enjoy
As a Yankee at heart who lives in and loves Naples, Forida, I decided to make this recipe, substituting key lime juice in equal amounts for lemon juice. It was terrific! Everyone loved them at a party I catered in Naples. I used a bottled key lime juice and then put them on a platter with fresh blackberries and they tasted and looked great.
Great recipe. Big hit.
The crust is too greasy, and the filling is too sweet, you can’t taste much of the lemon.
Can you use butter instead of margarine? Is so, salted or unsalted? Good suggestion on adding lemon zest. Thank you!

Since we do not use Margarine, using Butter was not a second thought. The crust came out great and was not greasy.
