Great-Grandmother's Banana Bread

Moist and delicious, this easy banana bread recipe is a Yankee staff favorite.

Yield: 1 loaf

Ingredients

  • 1/2 cup (1 stick) butter, softened
  • 1 cup sugar
  • 2 eggs, beaten
  • 1/2 cup sour cream
  • 2 ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • 2 cups bread flour (all-purpose works, too)
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/2 cup chopped pecans (optional)

Instructions

Cream butter and sugar in a bowl until light and fluffy. Add eggs, sour cream, bananas, and vanilla; mix well. Combine flour, baking powder, and baking soda, and add to egg mixture; mix well. Stir in pecans. Pour into greased 9x5-inch loaf pan. Bake at 350 degrees for 55 minutes, or until loaf tests done.

Wow! Delicious! Had to substitute 3/4 of the sugar with brown sugar, and it still turned out moist and delicious. A definite keeper!
