1 loaf
Ingredients
1/2 cup (1 stick) butter, softened
1 cup sugar
2 eggs, beaten
1/2 cup sour cream
2 ripe bananas, mashed
1 teaspoon vanilla extract
2 cups bread flour (all-purpose works, too)
2 teaspoons baking powder
1 teaspoon baking soda
1/8 teaspoon salt
1/2 cup chopped pecans (optional)
Instructions
Cream butter and sugar in a bowl until light and fluffy. Add eggs, sour cream, bananas, and vanilla; mix well. Combine flour, baking powder, and baking soda, and add to egg mixture; mix well. Stir in pecans. Pour into greased 9×5-inch loaf pan. Bake at 350 degrees for 55 minutes, or until loaf tests done.




Wow! Delicious! Had to substitute 3/4 of the sugar with brown sugar, and it still turned out moist and delicious. A definite keeper!
I’ve tried several banana bread recipes, and this is the best one, by far!
I love it! It is a great treat to bring to parties and to just have at home for a snack. A great recipe!

Try adding 2T of rum.
I like throwing in some shredded sweet coconut or chocolate chips. Recipe is a keeper
