Granny Smith Apple Brunch Cake

  • cooking spray
  • 1/2 cup butter, softened
  • 8 ounces cream cheese, softened
  • 1 cup sugar
  • 2 eggs
  • 1/2 teaspoon vanilla
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup milk
  • 3 medium-size Granny Smith apples (peeled, cored, and diced)
  • Topping:
  • 3/4 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup butter


Cream together butter and cream cheese. Add sugar and eggs, beat well. Add vanilla. Sift flour, salt, baking powder, and baking soda together in a separate bowl. Add to the cream cheese batter alternately with milk. Stir in diced apples. Batter will be very thick. Spoon into greased and floured 9x13-inch pan. Prepare the topping by combining the flour, sugar, and cinnamon, and mixing well. Cut in butter in small pieces until it is the size of small peas and is evenly distributed. Sprinkle the topping mixture evenly over batter. Bake at 350 degrees For 50 to 60 minutes. Let cool at least 20 minutes before slicing.

    Loved it! I would add a little granulated sugar to the topping for sweetness.

  • I absolutly loved this cake. It was very easy to make and the cream cheese kept this cake so moist. A delicious cake to enjoy with a special friend and a cup of tea on Sunday morning
