O’Rourke’s Irish Soda Bread

For easier slicing, Brian O’Rourke makes his sweet soda bread in a loaf pan. He uses this bread in the famous Irish Soda Bread French Toast that he serves at O’Rourke’s Diner in Middletown, CT. This bread is also available for purchase at the diner.

Total time: 1 hour 30 minutes; active time: 15 minutes


  • 2 1/2 cups flour
  • 1 cup plus 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 cup raisins
  • 2 beaten eggs
  • 1/2 cup sour cream
  • 1/3 cup vegetable oil
  • 1/3 cup buttermilk
  • Optional: 1/2 tablespoon toasted caraway (toast the caraway seeds in a frying pan over medium-high heat for 2- 3 minutes, or until fragrant.)


Preheat oven to 350˚. Grease a 9- by 5-inch loaf pan. Set aside. In a medium bowl, whisk together the flour, sugar, salt, baking soda, baking powder, raisins, and caraway. Add eggs, sour cream, oil, and buttermilk and stir just until combined (do not overmix)

Pour dough into prepared pan. Bake until bread is golden brown on top and a knife inserted into the center comes out clean, 60 to 75 minutes. Let soda bread sit for at least 3 and up to 36 hours before using for French toast. Yield: 12 to 15 slices

    Wow! This is an Irish Soda Bread with punch! So good and moist with the sour cream..Irish soda bread reminds me of spring after the long winter…this bread celebrates spring’s arrival!

    I will make the French toast that piggy backs this recipe.
