Watermelon Soup

This is a cool and refreshing summer soup. Watermelon is also a great source of vitamins A and C.

Yield

8 bowls

Ingredients

9 cups (6 pounds) seedless watermelon, diced
2 tablespoons, chopped fresh mint
1 tablespoon sugar
1 teaspoon ginger, chopped
3/4 cup water mixed with 1/4 cup sugar
2 tablespoons fresh lemon juice

Instructions

Combine 1 cup of the diced watermelon with the mint and sugar in a bowl.Set aide. Blend the other 8 cups of watermelon and the rest of the ingredients in a blender until smooth. Let sit for 30 minutes. Strain soup. Serve and top each serving with the reserved watermelon mix from the bowl. Garnish with a mint leaf.
