Watercress Piecrust

Adds “zing” to a meat or vegetable pie.

Yield

1 crust

Ingredients

1 cup sifted flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
pinch of powdered thyme
2 tablespoons lard
1/3 cup finely chopped watercress leaves, well dried
1/2 cup cold milk

Instructions

Sift the flour again with the baking powder, salt, and thyme. With two knives or a pastry blender, cut the lard, and watercress leaves alternately into the flour. Add the milk gradually, and roll out on a floured board.
