Dressing:
1/2 cup plain yogurt
1/2 small red onion, chopped
1 clove garlic, minced
1 teaspoon Dijon mustard
1 teaspoon vinegar
Salad:
2 bunches watercress
1 ‘Granny Smith’ apple
1/4 cup bleu cheese
salt and pepper, to taste
Whisk together the dressing ingredients in a small bowl. Combine the salad ingredients in a large bowl. Pour dressing over salad, toss, and season to taste with salt and pepper.
