1/2 lb of good thick cut bacon – chop, fry, drain and crumble
1 lg cucumber – peel, de-seed and chop
2 cans garbanzo beans – rinse and drain
1/2 sm head parsley – chop fine
1 block feta – crumble
1 sm red onion – chop fine
Mix all these together, top with vinaigrette of your choice (or make your own). Cover and refrigerate for a couple of hours. Seriously, it’s ugly-looking, but SOOOO good
