1 turkey carcass (plus leftover bits of meat)
2-1/2 quarts cold water
4 carrots, peeled and chopped
2 cloves garlic, chopped
2 teaspoons thyme or sage
1/4 cup celery leaves
1 bay leaf
Salt and pepper to taste
Combine all ingredients in soup kettle. Simmer 2 hours, partially covered. Skim occasionally. Strain through cheesecloth. Cool, chill, and skim fat from top.
