1/4 cup flour
1 tsp salt
1/4 tsp pepper
1 1/2 lbs round steak
1 tbsp vegetable oil
1 can 28 oz tomatoes
1 onion, sliced
1 can (4 oz) whole green chiles
4 red potatoes, peeled and quartered
4 carrots cut in chunks
2 tbsp cornstarch
2 tbsp water
Cut steak into serving pieces. In resealable bag. Combine flour, salt and pepper. Add steak and shake to coat. In skillet medium heat brown steak in oil on both sides. Add undrained tomatoes and onion. Place drained chiles over meat bring to boil. Reduce heat and cover for 30 minutes. Add potatoes and carrots cover and simmer 70 to 80 minutes or til meat is tender. Combine cornstarch and water til smooth. Stir into steak, bring to boil, stir constantly til thick and bubbly.
