A combination of red, yellow, and green bell peppers is particularly attractive. Serve with torn pita or sliced French bread.
7 bell peppers, seeded and cut into bite-size pieces
8 cloves garlic, peeled and minced
1 tablespoon honey
1/2 cup diced fresh tomatoes, seeded
3 tablespoons olive oil, divided
2 tablespoons red wine vinegar, divided
salt and freshly ground black pepper (optional)
Preheat oven to 400° F.
Toss together the peppers, garlic, honey, tomatoes, 2 tablespoons of the olive oil, and 1 tablespoon of the vinegar.
Place in a baking dish and bake for 50 minutes, stirring occasionally.
Remove the peppers from the oven, taste, and add additional olive oil, vinegar, and salt and pepper, if you wish. Serve at room temperature.
