Susi’s Granola Cookies

I created this recipe for my husband who was really into health food. This cookie is the first to disappear!

Yield

4 to 5 dozen

Ingredients

1 cup white sugar
1 cup brown sugar (packed)
1 cup unsalted butter
1 teaspoon soda
1 teaspoon salt
1 teaspoon vanilla
2 eggs
1 1/2 cups flour
1 1/2 boxes Sunbelt Fruit and Nut Granola Cereal
1 to 2 packages dried apricots, chopped
1 package dried pineapple, chopped (optional)
1 package dried cherries, chopped (optional)
1 package dried mango, chopped (optional)

Instructions

Mix all ingredients in a large bowl. Let sit to soak up moisture. Drop cookies onto ungreased cookie sheets and bake at 350 degrees for 7 to 10 minutes.

Notes

Use at least one of the optional fruits with the apricots. Dough keeps well in the fridge.
