Sticky Date Pudding

Ingredients

2 1/2 cup chopped dates
2 tsp baking soda
1 cup butter – room temp – sut into small pieces
1/2 cup sugar
4 eggs
2 1/2 cup ap flour
2 tsp salt
1 tbsp vanilla extract
1 heaping tbsp baking powder

Instructions

oven = 350deg
butter an 8″x8″ pan
Place dates in saucepan and cover with water – and bring to a boil. Reduce to simmer and let cook 3 minutes – add baking soda. Let cool – drain BUT reserve 1 cup of liquid.

Cream butter and sugar – then beat in eggs one at a time. Mix in flour, sugar, vanilla and combine – then add baking powder and reserved liquid. Add dates and stir to combine.

Bake 30 – 40 minutes – until top is golden brown

Top with caramel sauce while still warm.
