Spinach Souffle

I received this recipe years ago from a friend in Hawaii. It is delicious and great to take to parties. Everyone thinks it is very fancy but is it quick and easy.

Yield

15-18 squares

Ingredients

1 pkg frozen chopped spinach
8 oz.shredded Monterey Jack cheese
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. pepper
1/3 cup + 1 tbs of flour
2 eggs
1/2 cup milk
2 tsp butter/margarine

Instructions

Preheat oven to 350 degrees. Cover spinach in pan of water, cook until boiling, then drain well to remove all water. Combine spinach with shredded cheese. In a separate bowl, combine other ingredients. Mix well, then add to spinach/cheese mixture.

Melt butter/margarine in casserole dish. Add mixture to dish, spread evenly and bake 45 minutes. Do not overcook, or souffl

  1. You don’t have to cook the spinach first, just thaw, drain and use raw. Use different kinds of cheeses, tastes just as good.
