A good quiche is adaptable to whatever you have on hand or your own preferences. For this version of spinach quiche recipe, try throwing in extra cheese or increasing the amount of spinach.

Ingredients

One 9″ pastry shell, baked
1/2 cup diced cooked ham
10 ounces frozen chopped spinach or 2 cups packed fresh spinach, chopped
2 tablespoons chopped onion
2 tablespoons butter
3 eggs
1-1/2 cups half-and-half
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon nutmeg
1/4 cup Gruyere cheese

Instructions

Saute ham, spinach, and onion in 2 tablespoons butter until all liquid has evaporated. In a separate bowl, beat eggs with cream and seasonings. Add to other ingredients, blend, and pour into pie shell. Bake at 375 degrees F for 40 minutes or until set. Cool and serve.

  1. Great Recipe! To make any quiche extra high and fluffy try adding half cup mayonnaise. Made this one even better.
