1 package (10 ounces) frozen chopped spinach
1 carton (12 ounces) cottage cheese
1 cup grated cheddar or mozzarella cheese
3 eggs
2 tablespoons oil
1 teaspoon onion or garlic salt
Freshly ground pepper
Cook spinach about 5 minutes, drain, and press out all water. Combine cottage cheese, cheddar or mozzarella, spinach, eggs, oil, and seasonings. Pour mixture into lightly oiled 9-inch pie plate. Bake at 350 degrees F for 40 minutes or until knife comes out clean. Dot with butter or oil for a golden top.
