3 cups shelled peanuts
1 tablespoon peanut oil
1 tablespoon sugar
2 teaspoons curry
1 teaspoon cumin
1 teaspoon garlic powder
3 teaspoons kosher or sea salt
Heat oven to 300 degrees.
In a medium bowl, combine ingredients. Transfer to a aluminum foil lined baking sheet and spread into one layer. Bake 10 minutes — giving the pan a good shake halfway through. Remove and shake the pan again. Cool.
