Gluten-free and high in protein, quinoa is a great way to add rich nutrients and fiber to your diet. Added flavors of basil, lemon, tomato, and edamame blend beautifully.

Ingredients

1 1/2 cups quinoa, rinsed
3 cups water
Juice of 1 lemon
1 cup small grape or cherry tomatoes, halved
4 ounces crumbled goat cheese
1 cup shelled edamame beans
1/4 cup diced red onion
3 tablespoons thinly sliced fresh basil leaves
1/2 teaspoon table salt
1/2 teaspoon freshly ground black pepper

Instructions

Combine the quinoa and water in a 3- to 4-quart pot. Bring to a boil; then reduce the heat to low and cook until the grains are translucent, about 15 minutes. Fluff with a fork and cool 5 minutes; then pour into a large bowl. Add lemon juice, tomatoes, goat cheese, edamame, onion, basil, salt, and pepper, and toss to combine. Taste and adjust the seasoning as desired. Serve at room temperature.
