Scalloped Oysters

Serves 6

Ingredients

1 cup soft breadcrumbs
1 cup dry cracker crumbs
¾ cup melted butter
2 pints oysters in their liquor
1 teaspoon salt
pinch of mace
1 tablespoon lemon juice
2 tablespoons chopped parsley
½ cup oyster liquor
¼ cup milk or cream

Instructions

Mix the breadcrumbs, cracker crumbs, and butter. Spread half of the mixture in a large, shallow pan. A big pie pan or a rectangular baking dish does well. Arrange the oysters in two layers on the crumbs, add the remaining ingredients, and top with the rest of the crumbs. Bake in a hot (400°F) oven for 30 minutes.
