As the owner of the Americus Garden Inn Bed & Breakfast, I am always looking for new and interesting breakfast ideas. This oven omelette is easy to prepare, fluffy, and delicious.
1/2 cup hot chunky salsa
1 cup shredded Jack cheese
1 cup shredded Cheddar cheese
6 eggs
1 8-ounce carton sour cream
Preheat oven to 350 degrees. Pour the salsa into bottom of greased 10-inch quiche dish. Sprinkle cheeses over salsa.
Combine eggs and sour cream in a blender. Blend until smooth. Pour egg mixture over cheeses. Bake, uncovered for 30 to 40 minutes or until set.
