Roasted Natural Chicken With Roots

Better than the October 2006 issue on page 81! Its got sunflower root, onion, bella mushroom, acorn squash, patty pan squash, Idaho potato, elephant garlic, carrots, parsnip, beets, rosemary, basil and tarragon.

Two roasted chickens with crispy skin are placed in a pan filled with roasted vegetables, including carrots, onions, and potatoes.
