Roasted Buttenut Squash with Gorgonzola

Ingredients

1 Butternut squash (or 1 pkg. of precut)
1/2 tsp. Salt
1/2 tsp. Pepper
2 Tbsp. Unsalted melted butter
3 oz. Gorgonzola cheese

Instructions

Preheat oven to 400 degrees. Peal the squash and carefully cut in half lengthwise. Scoop out seeds and discard. Cut into 1″ pieces. Spread squash out on cookie sheet and cover/mix with butter, salt, and pepper. Bake for 30 minutes and turn peices over. Bake for another 30 minutes until squash is tender and beginning to brown. Remove from oven, sprinkle with cheese and serve.
