Raisin Cookie Cake

Ingredients

1 1/2 c water
1 c raisins
3/4 c raisin water
1/2 t salt
1 t soda
1 c sugar
1 egg
3/4 c shortening
2 c flour
1 t cinnamon

Instructions

Bring water to a boil. Add raisins and let sit for 5-10 minutes. Combine raisin water, salt and soda. Cream in separate bowl: sugar, egg and shortening. Add flour, cinnamon, raisins and raisin water mixture.
Grease and flour large cookie sheet. Pour batter into pan and spread evenly. Bake cookie cake for 13-15 minutes at 375 degrees. Spread with white icing when cake is slightly cool. Cut into squares and serve.
