Quick Tea Loaf

Yield

Makes 1 loaf.

Ingredients

3/4 cup sugar
1 egg
1-1/4 cups orange juice
3 cups biscuit mix
1/2 teaspoon cinnamon
3/4 cup chopped walnuts
1/4 cup raisins or chopped dates
1 teaspoon grated orange rind
1 tablespoon confectioners’ sugar (optional)

Instructions

Preheat oven to 350 degrees F. Combine sugar, egg, juice, biscuit mix, and cinnamon; beat well. Stir in walnuts, dates, and rind, and pour into greased loaf pan. Bake until toothpick inserted into center comes out clean, about 50 minutes. Cool completely before slicing. Sprinkle with confectioners’ sugar, if desired.
