It came from a cousin in AR that is a real good cook. Normally all the ingredients you will have on hand in your pantry & freezer. It is quick for last minute meals.
1 lb. ground meat(beef or deer)
1 onion chopped fine
1 can ranch style beans(with or without jalopenos)
1 box of spainish rice
salt to taste
black pepper to taste
shredded cheese (mexican blend)
Flour tortillos–optional for leftovers
Brown ground meat, chopped onions,salt and pepper together in iron skillet. Add ranch style beans and the box of spainish rice (prepared to box directions)to meat and onions. Pour in 9×13 casserole dish sprayed with Pam and top with shredded cheese. Cover and bake at 350 degrees till cheese is melted.
Can use leftovers (if any) to make burritos. Just heat buttered flour tortillos in microwave till soft and fill with the heated leftovers and serve.
