PUMPKIN BREAD

Yield

Makes 1 loaf.

Ingredients

1 cup cooked, mashed pumpkin
2/3 cup sugar
1 teaspoon salt
1/2 cup shortening
1 cup scalded milk
1/2 yeast cake dissolved in 1/2 cup lukewarm water
5 cups flour

Instructions

Use fresh pumpkin, stewed and strained, or canned pumpkin. Combine pumpkin with sugar, salt, shortening, and milk. When mixture is lukewarm, add dissolved yeast and flour. Knead well, cover, and let rise overnight. In the morning, shape into one large loaf, and bake at 375 degrees F. for 20 minutes. Reduce heat to 350 degrees F. and bake 40 minutes longer.
