Cranberry White Chocolate Cookies

1 cup (2 sticks) butter or margarine, softened
1 cup brown sugar
2 eggs
1 tsp. Vanilla extract
2 cups old-fashioned oats
2 cups flour
1/2 tsp. Salt
1 tsp. Baking soda
1-1/2 cups dried whole cherries
1-1/4 cups good-quality white chocolate chunks


Cream butter and sugar together with an electric mixer. Add eggs, mixing well, followed by vanilla extract. In a separate bowl, combine oats, flour, salt and baking soda. Add to creamed mixture in several additions. Stir in dried cherries and white chocolate chunks. Drop by teaspoonfuls onto ungreased baking sheets, 1 inch apart. Bake in a 375-degree oven for 10 to 12 minutes or until golden brown.
