Portuguese Kale Soup

Yield

Makes 4 servings.

Ingredients

1/4 pound Italian sausage
1 tablespoon olive oil
2 medium onions, chopped
4 cloves garlic, minced
6 boiling potatoes, peeled and chopped
7 cups chicken stock
1 large bunch kale, stemmed and chopped
salt and pepper

Instructions

Brown the sausage, drain, and slice. Heat olive oil in a stockpot, and saute the onions and garlic. Add potatoes and stock. Bring to a boil, and simmer for about 30 minutes until potatoes are done. Puree half the soup for thickening, then pour back into the pot. Add sausage, kale, and seasonings; then simmer for another 10 minutes.

  1. This is a Portuguese soup….Italian sausage & olive oil? Use linguica or chourico(Portuguese sausage). Most Portuguese people will use red kidney beans and some red table wine.

  2. Substituting Italian Sausage for Portugese sausage is OK for folks who live in rural areas where the Portugese sausages are unavailable.
