Pecan Bread

Ingredients

2-1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1-1/2 teaspoon vinegar or lemon juice
1/2 cup milk
3/4 cup liquid brown sugar
1 egg
1/4 cup melted butter
1 teaspoon vanilla
1 cup coarsely chopped pecans

Instructions

Preheat oven 350 degrees.
In a large bowl mix together flour, baking soda, baking powder and salt. In a small bowl combine vinegar or lemon juice, and milk, let stand a few minutes. Add liquid: beat until combined.
Add liquid ingredients to dry ingredients and stir until thoroughly mixed. Add pecans and stir until well distributed. Turn into a lightly greased 1x5x3-inch loaf pan. Bake for 50 minutes or until cake tester inserted in center comes out clean.
Cool in pan for 10 minutes. Remove bread from pan and cool on wire rack.
