Saw on Rachael Ray TV
4 pcs smoked bacon
2 Tbsp olive oil
2 cans Sam’s chicken
Salt and pepper
1 large onions
2-3 carrots
3 cloves garlic
1 1/2 Tbsp flour
1 1/2 rounded Tbsp paprika
1/2 Tbsp cumin
1/4 tsp dried marjoram
2 cups chicken broth
1 20oz crushed tomatoes
2 1/2 Tbsp butter
16 potato pierogies (*or 16oz egg noodles)
(Dumplings w/mashed potatoes inside)
1/2 cup sour cream
2 Tbsp chives
In large pot add olive oil.
Brown bacon and break up.
Add chicken, salt/pepper,and chicken broth.
In another skillet, saute onions, carrots, and garlic in butter.
Add saute to pot,Stir in spices.
Make hole in center of pot, add flour and cook for a minute or two.
Add tomatoes and stir all together.
*Prepare noodles, then add to pot.
Brown pierogies in butter.
Serve stew w/dollop of sour cream.
Top with pierogies, sprinkle with chives.
*If pierogies are not available.
