Pancakes (Coconut Flour/Oil/Milk)

Yield

8 tiny 2" pancakes

Ingredients

2 eggs
2TBS coconut oil or butter, melted
2 TBS coconut milk or whole milk
1 tsp sugar
1/8 tsp salt
2 TBS sifted coconut flour
1/8 tsp baking powder

Instructions

Blend together eggs, oil, coconut milk, sugar and salt. Combine coconut flour and baking powder and thoroughly mix into batter. Heat coconut oil in skillet and spoon batter onto hot skillets. Batter will be thick but will flatten out while cooking, makes about 8 pancakes (tiny 2″ pancakes!)
