This is for ACGDK and anybody else who wants a new and different peanut butter
cookie. These are chewy! This was donated by Virginia Hrachovy whose husband
Frank works in our office. Enjoy!
1 cup (2 sticks) margarine (or butter) softened
1 cup white sugar
3/4 cup brown sugar
2 eggs beaten
1 cup peanut butter (smooth or chunky)
1 teaspoon vanilla
2 1/4 cup flour
1 1/2 cup quick oatmeal (quick cooking oats but not instant)
2 teaspoons baking soda
1 12oz package Tollhouse semi-sweet chocolate chips
Preheat oven to 350 degrees
Mix the sugars, vanilla, eggs and beat well.
Mix in the peanut butter. (hint: soften peanutbutter in the microwave but
don’t get it too hot or it will cook the eggs prematurely).
Mix in the flour, oats and baking soda.
Stir in the chocolate chips.
Drop blobs the size of a walnut shell on to a greased cookie sheet.
Bake 10 to 12 minutes.
Makes about 4 dozen.
