Out-of-Ginger Gingerbread

Makes 8 servings.

Ingredients

1/2 cup (1 stick) butter
3/4 cup molasses
1/2 cup boiling water
3/4 cup sugar
1 egg
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon nutmeg
1 teaspoon baking soda
1-1/2 cups flour

Instructions

Preheat oven to 350 degrees F. Grease and flour an 8×8-inch baking pan. In a pot over low heat, melt butter; stir in molasses, water, and sugar. Remove from heat and add egg. Sift dry ingredients together and add them to the butter mixture. Pour into pan and bake for 30 minutes.
