When it is lying on your plate in a heap – with mounds of whipped cream, chunks of crust, and a coating of chocolate sauce – it certainly looks like a mud pie. The taste, however, is divine. –The Village Inn of Woodstock, Woodstock, Vermont
1/4 cup melted butter or margarine
1 cup finely crushed fudge chip cookie crumbs (or crumbs from any chocolate cookie)
1/2 gallon coffee ice cream
Hot fudge sauce and whipped cream
Pour melted butter into cookie crumbs and stir until well blended. Press into a 9-inch pie pan, starting with the sides of the pan, then the bottom. Tamp the crumbs gently in place.
While making the crust, allow the ice cream to soften slightly. With a large spoon, scoop the ice cream into the pie crust. Gently push the ice cream down to eliminate air pockets. Smooth the ice cream with a cake spatula or the side of a knife. The pie should be high in the middle and slope down to the crust. Harden pie in freezer for approximately 1 hour. To serve, cut with a knife dipped in hot water and top with your favorite hot fudge sauce and whipped cream.
