Old Fashioned Apple Stack Cake

This recipe is a Southern Mountain favorite. My Grandma from the backwoods of Kentucky passed this down.It is a holiday favorite.

5-7 Layer Cake

Ingredients

FOR THE APPLES:
1 lb. dried apples
1 cup granular sugar
1 cup brown sugar
2 tsp. ground cinnamon
1/2 tsp. allspice
1/4 tsp. ground cloves

FOR THE CAKE:
4 cup flour
1/4 tsp. ginger
1 cup sugar
4 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1/4 cup molasses
2 medium eggs
1/2 cup butter
3/4 cup buttermilk
2 tsp. vanilla

Instructions

FOR THE APPLES:
Put apples in pot adding enough water to just cover the apples.

Over a medium heat, cook apples until tender. Mash Apples,then add sugar and spices continue cooking for 5 more minutes. Stiring so the mixture don’t stick.

FOR THE CAKE:
Sift dry ingredients into a bowl. Cut in the butter

Add the eggs to the buttermilk,molasses and stir.

Pour into flour mixture and add vanilla. Stir.

Mix into a soft dough. If needed add a little more buttermilk.

Grease and flour 9 inch cake pans. Measure 1/2 cup dough into each pan. Dust your hands with flour and pat the dough out to the edges of the pan.

Bake at 450°F. for about 5 minutes or until slightly browned.Repeat this until you have at least 5 to 7 layers baked.

While the layers of the cake are still nice an warm, stack the layers adding 2/3 cups of apple filling between each layer.

Cover tightly and allow to sit 1 whole day for the layers to soak in the apple juices.

Right before serving, lay a paper doily on top of the cake and sprinkle with powered sugar. Carefully remove doily and have a beautiful pattern on top of cake.
