A little like pecan pie, but cakier.
3 tablespoons butter or margarine
5 tablespoons packed light brown sugar
2-1/2 tablespoons rolled oats
1-1/2 cups light corn syrup
1 teaspoon salt
3 eggs, separated
1 cup pitted dates, chopped
1 cup walnuts, chopped
1 9-inch unbaked pie shell
1 cup heavy cream, whipped
Cream together the butter or margarine, brown sugar and rolled oats. Add the corn syrup, salt and beaten egg yolks. Blend the mixture well. Stir in the dates and walnuts. Fold in the egg whites, stiffly beaten, and spoon the mixture into the unbaked pastry shell. Bake at 325 degrees F for 55 minutes.
Serve chilled with unsweetened whipped cream.
