The oats and oil (instead of butter) make these cookies deliciously chewy.
1/2 cup oil
1/2 cup packed brown sugar
1/2 cup sugar
1 egg
1 teaspoon vanilla extract
1 tablespoon milk
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
pinch of salt
1 cup uncooked rolled oats
1/2 cup chocolate chips
Cream together oil and sugars. Beat in the egg. Add vanilla and milk and mix well. Stir together the dry ingredients and beat into the wet mixture. When smooth, stir in oats and chocolate chips. Drop by tablespoonfuls about 2 inches apart onto ungreased cookie sheets. Bake at 350 degrees F for 10 to 12 minutes — do not overcook.
